What are the advantages/disadvantages of using oil drums (as opposed to wood barrels) for aging your sours?

First, these are actually food grade barrels that we got from a meadery not oil drums. We don’t recommend using oil drums for this purpose. As for the benefits, stainless steel can be thoroughly washed with chemicals. This allows the brewer to add his own combination of souring agents. If a barrel goes bad, it’s thrown away…if a beer in one of these goes bad, we just clean and start over. Side note: apparently using stainless vessels when making sours is not uncommon in some Belgian breweries.
